These were to die for! Easy to make and were full of flavor! These can be made with any meat or your choice, and this recipe is easy to make it your own. You can switch it up by adding beans, or pepper jack cheese, maybe some jalapeños! So many options!
I did a basic recipe for this batch!
- 2 cups shredded chicken
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 2 chopped green onions
- 1/2 tsp oregano
- 6 tortillas
- 1 tbsp olive oil
Mix the shredded chicken, salsa, onions, oregano and cheese. Fill tortillas with 1/3 cup of the mixture, fold into mini burritos. Brush the olive oil over the tops of the chimichangas.
Bake in a 400 degree oven for 25 minutes.
This is a great meal to make for your family, friends or to even enjoy alone with a glass of wine! I used to fry my chimichangas and used to feel guilty about it afterwords. Once I discovered baking them it totally changed the game!
