Ground turkey sweet potato skillet

I’ve had this recipe on the back burner for a while, and decided to finally break it out tonight. And I’m so happy I did ! It’s so easily to play around with and make it your own! I for example like white sweet potatoes over yams, the taste is more up my ally. It can be fun to play around with the cheeses, especially depending on what else you’re serving this with. Tonight’s pick was cheddar, my favorite ! Have fun with this recipe, and enjoy!!

  • 1lb ground turkey
  • 1 tsp garlic minced
  • 1/2 white onion
  • 2 tbsp olive oil
  • 1 cup cheddar cheese
  • Salt and pepper
  • 1 tsp chili powder
  • 1 large sweet potato, cubed

In a large cast iron heat up the olive oil over medium heat. Add the turkey and cook for 5-8 minutes. Add in the onion and garlic, cook for 10 minutes. Add the sweet potatoes, salt, pepper and chili powder. Cover but continue to stir every few minutes. Cook until potatoes are tender. Add cheese, lower heat to low, cover until cheese is melted.
Enjoy!!
